Peanut Butter Vegetable Soup - NEW!!!

Ingredients

4 cups vegetable broth (about 1 liter)
1/2 cup potatoes, peeled and cubed
1/2 cup carrots, diced
1/2 cup zucchini, diced
1/2 cup broccoli florets, chopped
1/2 cup tomatoes, diced
1/4 cup celery, diced
1 small onion, diced
1/4 cup red or yellow bell pepper, diced
1 small garlic clove, minced
1/4 cup peanut butter (chunky or smooth)
1/4 teaspoon chili powder
1/4 teaspoon ground black pepper

Directions

In a large stockpot, combine first 10 ingredients and bring to a boil. Reduce heat and simmer for 10 minutes. Add peanut butter and spices and stir until peanut butter is fully blended. Simmer for 2 or 3 minutes longer. Taste and adjust seasonings if desired. To serve, ladle soup into warmed bowls and garnish with croutons, fried onions, fresh parsley or whatever you like.

4serving at 3 per serving (the peanut butter)
